Ana Grgić Tomić and Ksenija Krajšek Mahorčič joined forces in presenting sustainable gastronomy

As part of the gastronomic event "Four Hands Dinner", the importance of sustainability in gastronomy, as well as the green stars of MICHELIN, was emphasized.

MICHELIN, the most important and well-known global restaurant guide, and the Croatian Tourist Board jointly organized an exclusive gastronomic event "Four Hands Dinner" at Gostilna Mahorčič in Rodik, Slovenia. autochthonousness, environmental awareness and sustainable development. The main stars of this exclusive dinner are the Croatian chef Ana Grgić Tomić from the Zagreb restaurant Zinfandel and the Slovenian chef Ksenija Krajšek Mahorčić from the cult restaurant Mahorčič. These are restaurants with the prestigious MICHELIN Green Star label, so many guests had the opportunity to taste a superbly prepared menu and unique gastronomic delicacies prepared according to the principles of sustainability. 

"MICHELIN is one of our most important partners in the promotion and positioning of Croatia as an excellent gastronomic destination. Today, our country is increasingly recognized for this segment of the offer, which is extremely rich and diverse, so each Croatian region has its own valuable wine and gastronomic specialties. the fact that tonight's event is the first of its kind is also an honor, given that this is the premiere Four Hands dinner in which sustainability in gastronomy and the prestigious MICHELIN green stars stand out. In addition to enjoying the richness of flavors and quality dishes, we are sure of the great promotional effects of this dinner which will further strengthen Croatia's position as a desirable gastronomic destination", said Kristjan Staničić, director of the Croatian Tourist Board, who before the dinner greeted all the guests and emphasized the importance of cooperation with MICHELIN, but also Slovenia as one of the most important foreign markets for Croatian tourism.

In addition to the guests, which included Slovenian and Croatian partners and media representatives, the evening was also attended by influencers from Slovenia and Italy whose profiles on social networks and online communication channels are closely specialized in gastronomy. 

"Celebrating the local culinary scene and highlighting inspiring professionals has always been at the heart of the mission of the MICHELIN guide. Tonight, by organizing such an exclusive event, we are pleased to highlight the gastronomic wonders of Croatia. Having two MICHELIN Green Star restaurants taking center stage also means a lot, it illustrates everything greater commitment of many restaurateurs to a more sustainable approach to gastronomy", they reported from the MICHELIN guide.

The menu included Adriatic shrimp marinated in homemade honey with baked cauliflower cream, gnocchi with porcini mushrooms and truffle cream, cod tripe in a creamy tomato and chili sauce and with chickpea foam prepared by Croatian chef Ana Grgić Tomić.

"I am happy that with my team of chefs from the Esplanade Hotel, with the support of HTZ and MICHELIN, I am actively participating in the international promotion of the Croatian gastronomic scene. This gala dinner and gourmet story, which I am preparing together with my fellow Slovenian chef, Ksenija Krajšek Mahorčić, places special emphasis on sustainability, which I believe that nowadays one of the burning issues is extremely important. Namely, in addition to the careful selection of seasonal foods, careful planning of the menu, the method of preparation is also important, as well as their maximum utilization. Such events contribute to awareness and I believe that we can greatly contribute with our influence reducing the harmful impact on the environment, while still enjoying high-quality and creatively prepared dishes", said Ana Grgić Tomić.

The menu also included dishes by Slovenian chef Ksenija Krajšek Mahorčić, who prepared deer with roasted beets, plums and hazelnuts, and a chestnut dessert with karst herbs and caramel. 

Master Kishoni Vjenceslav Madić was responsible for the selection and preparation of accompanying cocktails, and during the gathering and welcome, all guests had the opportunity to taste traditional Croatian dishes with a modern signature, such as crispy bars of Pag cheese with red cabbage gel and herbs, and baskets with salted trout and roe in citrus gel.  

We would like to remind you that starting this year, our country has a total of 84 restaurants bearing one of the prestigious labels on the MICHELIN gastronomic map, which is six restaurants more than last year, and it is especially worth noting that the Zinfandel's restaurant is the first restaurant in Croatia to be awarded the prestigious MICHELIN Green Star tag.
