Excellent move: The Dalmatian Marenda series is starting to be shown on HRT

The goal of the project is to return traditional Dalmatian dishes to the restaurant offer.

Strategic project of TZ Split Dalmatian County (TZ SDŽ) -  Dalmatian brunch, which is based on connecting restaurateurs and farmers and especially in the promotion of authentic offers, is experiencing its big step forward and its national premiere. 

Namely, on Croatian Radio and Television, from October 23th starting at 15.20:1 p.m. on HTV XNUMX, the broadcast starts "Dalmatian Brunch" series as a continuation of the TZ SDŽ project of the same name, which is the main sponsor of the series. 

In eight episodes of the series, viewers will have the opportunity to travel through Split, Kaštela, Jesenice, Makarska, Brač, Hvar, Imotska Krajina and Sinj and discover the specialties characteristic of each of these places.

Since the goal of the project is to connect restaurateurs and farmers, as well as to return traditional Dalmatian dishes to the restaurant offer, this move is certainly in the function of popularizing the project, but also creating demand for an authentic offer.

The philosophy of brunch and Dalmatian gastronomic customs is shown through colorful characters, long-time restaurateurs and respected chefs, who tried to explain the true meaning of brunch as believably as possible, or more precisely to bring viewers closer to the fact that brunch in Dalmatia is not only about a meal, but symbolizes a relaxed Dalmatian way of life. enjoying food, spending time with friends and family. 

Special attention in the series is focused on brunch "spoon-fed" which over the centuries fed numerous Dalmatian families, such as tripica, gregada, pašticada, tingula and the like. In addition to the dishes themselves, it is also emphasized the importance of local ingredients from this climate that give the dishes authenticity and recognition.

The first episode of the series, which will be broadcast tomorrow, shows a brunch in the Old Town on Hvar, while the remaining episodes will be shown in the following days - October 24, 25, 29, 30 and 31 at the same time, starting at 15.20:XNUMX p.m. hours. 

The "Dalmatian Brunch" project was launched by TZ SDŽ two years ago with the aim of reviving the original Dalmatian cuisine and customs associated with the traditional Dalmatian brunch. One of the key steps in this was the establishment of cooperation with catering establishments and OPGs, which is what we are trying to do return traditional Dalmatian dishes to the restaurant offer so that all visitors can enjoy an authentic gastronomic offer.

The project was promoted at the FESPO fair in Zurich and at special presentations in Munich, Essen, Sarajevo and Prague, and the Dalmatian brunch cookbook with traditional recipes will soon be published. Also, it's started cycle of education for restaurateurs and all tourism stakeholders, focused on food preparation, food service and sustainable practices, and so far more than 200 restaurateurs have successfully completed the training.

We recently made a feature on the topic of how the project is developing on the market, and on that occasion we spoke with three restaurateurs who shared their thoughts on the project.

Ante Tomaš Bajso, the owner of the Bajso Tavern in the Old Village of Jesenice between Split and Omiš, stated that "each of our foods can become part of a brunch. Specifically, with us, it is peka, a dish that we prepare for a total of two to three hours".

Lada Rakić, owner of the OPG of the same name, who runs the Andrija Resort with her husband in the village of Kotezi near Vrgorac, pointed out:There is an increasing demand for homemade, traditional, on a spoon - the way it used to be eaten. They also ask for beans with sausages, peppers, sarma... If we have that on offer, they will take this on a spoon rather than mixed meat from the grill.

Karlo Balić from Šolta, he has a tavern where he offers his wines, and he is currently in the process of 'sorting out' the documentation so that he can start offering local food. "It is important for guests to see that the food is local, they want to know what they are eating... " emphasizes Balić.
